Waffles - Crispy Bacon & Cheese

These Keto Bacon & Cheese waffles are so flavorful, crispy and delicious. They make a great meal, side or simply just enjoy it with a cup of coffee. I actually reheated a slice in my mini toaster oven yesterday and it became so crispy, and I enjoyed it with a cup of coffee - so good!

1.  For best results, weigh the ingredients with a digital scale.

2.  In a bowl, mix all the dry ingredients until well combined.

3.  Add the wet ingredients and mix until the batter is thick and smooth.

4.  Add the bacon, cheese, spring onions and mix until well combined.

5.  Preheat the waffle maker and grease it to avoid sticking. Of course, greasing is not necessary if your waffle maker has a strong non-stick function.

6.  Spoon the batter onto the center of the waffle maker, close and cook for about 10 mins.

7.  Cool the cooked waffles on a wire rack to prevent the steam from softening the waffles.

8.  This recipe makes about 10 to 12 waffles depending on the size. Mine came up to 11 waffles.

9.  Enjoy these crispy waffles as a meal, side or simply with a cup of coffee.

10.  To crisp up the waffles, just toast them in a mini toaster oven.

11.  These waffles can be refrigerated for up to a week and frozen for months.

DRY INGREDIENTS

Almond Flour= 240 g / 2 cups

Other flour options

1. Combo of Almond Flour =120 g / 1 cup + Coconut Flour = 40 g / 5.7 tbsp

2. Solely Coconut Flour = 80 g / 11 tbsp

Baking Powder = 4 g / 1 tsp

Salt = 6 g / 1 1/2 tsp

Black Pepper = 1/2 tsp

NOTE:

Even though you can use almond flour, a combination of almond and coconut flour or just coconut flour, the level of crispiness varies as follows;

Almond flour = the crispiest

Almond and coconut flour = moderately crispy

Coconut flour = the least crispy

WET INGREDIENTS

Eggs = 2 large (about 60 g per egg with shell)

Melted Unsalted Butter = 60 g / 1/4 cup (In the video, I used 30 g butter + 30 g bacon fat reserved from pan frying the bacon)

Unsweetened Almond Milk = 240 ml / 1 cup (You can also use Pea Milk or any keto friendly milk)

NOTE: For a dairy free option, you can replace the butter with coconut or olive oil.

OTHER INGREDIENTS

Bacon = 120 g / 1/2 cup (Cut the bacon into small pieces and pan fry until crispy. You can reserve the bacon fat for the batter, but this is optional)

Shredded Cheese = 120 g / 1 cup (I used a combination of cheddar and sharp cheddar)

Chopped Spring Onions = 27 g / 1/2 cup
