Shepherd Pie

If you love shepherd's pie like I do, you would be happy to know that this low carb or keto version tastes even better than the regular ones. It's a guiltfree comfort meal for any time of the day.

DIRECTIONS FOR CAULIFLOWER MASH

1.  Cut, clean and pat dry the cauliflower.

2.  Place cauliflower on a baking tray and drizzle with cooking oil. Mix well and roast at 390F or 200C until slightly browned.

3. Place cauliflower in a food processor and process until fine. Add butter, cream cheese, whipping cream, salt, black pepper and process until well combined. Adjust taste accordingly. Set aside.

DIRECTIONS FOR FILLINGS

1. In a pan, stir fry onions with some cooking oil until fragrant.

2. Add ground meat and seasonings. Stir fry until meat is almost cooked. Then add tomatoes and frozen beans. Mix until well combined. Adjust taste accordingly.

3. Spoon into a baking dish and spread evenly.

4. Spoon cauliflower mash on top and spread evenly. Wet the spoon for easy spreading. Use a fork to make lines as patterns. Wet fork to prevent sticking. Brush with melted butter.

5. Bake at 390F or 200C until the top turns golden brown.
