Fried Fish
This is a classic fried fish with ginger being the key ingredient. It's a family favorite because it's so crispy, aromatic and tasty. The secret is using the ginger infused oil to fry the fish. This process makes the fish so aromatic. And it's made even more delicious by using some of the oil that has been infused with the ginger and the fish to make the sauce. I chose a black pomfret for this dish, but you can opt for any fish that's suitable for frying. Even though I used a whole fish, but you can opt for fish fillets or the tail portion. I have taken a slightly different approach to this video by making an introduction and taking you on a trip to the market to pick the fish so I hope you will enjoy it.
1. Pat dry fish and rub with salt.
2. In a pan, fry the ginger with some cooking oil until crispy, set aside.
3. In the same oil, fry the fish until golden brown.
4. When the fish is almost done, scoop some of the oil into a small pan or pot, add the sauce and bring to a boil.
5. Remove fish and place on plate. Immediately pour the sauce over the fish.
6. Top with fried ginger and garnish with spring onions.
