Chocolate Cream Cheese Muffins

If you love the original cream cheese muffins, this is a really good variation. The chocolate cake and the cream cheese filling make a beautiful color contrast. The cake is so soft and fluffy, and the filling is so creamy and flavorful.

3. In a bowl, mix the cream cheese with a spatula until soft and creamy. Then add the butter, sweetener and whisk until well combined and the butter has turned into a pale color.

7. Prepare the cream cheese filling by mixing the cream cheese until soft and creamy. Then add the powdered sweetener and mix to combine. Lastly, add the egg yolks and mix until smooth and creamy.

8. Transfer the cream cheese filling into a piping bag, tighten the bag and cut out the tip of the bag.

9. Squeeze the filling into the middle of the cake batter until all the filling is used up.

10. Bake at the lowest rack for 15 to 20 mins or until a toothpick comes out clean.

11. These muffins can be enjoyed warm or chilled. They can be refrigerated for up to a week and freeze for up to 3 months.

INGREDIENTS FOR CAKE

Coconut flour = 60 g / 1/2 cup

Other flour options

1. Solely Almond flour = 240 g / 2 cups

2. Combo of Almond flour = 120 g + Coconut flour = 30 g

Unsweetened cocoa powder (sieved) = 20 g / 2 3/4 tbsp

Cream Cheese (softened) = 80 g / 2/3 cup

Unsalted Butter (softened) = 120 g / 1/2 cup

Monk fruit = 80 g / 0.4 cup

Whole eggs (room temp) = 4 large (230 g)

Whipping Cream = 160 ml / 2/3 cup

Baking powder = 4 g / 1 tsp

Powdered Sweetener = 24 g / 3 tbsp (I used Allullose, but you could also use any keto friendly powdered sweetener)
