Bacon Jam

I am sure that those of you who have made this jam before can vouch how insanely delicious it is. It is truly a bacon lover's dream come true. The aroma and taste are out of this world, and I love the burst of flavors - savory, sweet and tangy. If you love a spicy kick, just add more red chili flakes.

1. For best results, weigh the ingredients with a digital scale.

2. Cut the bacon into smaller pieces. Set aside.

3. Dice the onion. Set aside.

4. Place the bacon into a cold pan. Turn on the heat and fry slowly over medium heat until they turn foamy, brown and crispy.

5. Drain and reserve the bacon fat. Once the bacon is cooled, chop them into smaller pieces with a knife. You can also use a food processor. Set aside.

6. In the same pan, add the diced onions and salt. Cook over medium heat until soft. Add the sweetener, paprika powder and red chili flakes. Stir to combine.

7. Add the apple cider vinegar, water and cook for a while.

8. Add the chopped bacon and cook until the texture is almost dry and thick. Adjust taste accordingly.

9. Store in clean and dry jars.

10. They can be refrigerated for up to 2 weeks and frozen for 6 months. To reheat, just scoop a desired amount into a bowl, microwave for about 30 seconds and it will become alive again.

11. This delicious bacon jam can be served with bread, crackers, chips, biscuits, waffles, pancakes or top it on scrambled eggs, low carb noodles, rice, salads, quiche, pasta, pizza, etc.

Bacon = 500 g (4 1/2 cups)

Yellow onion = 1 large

Monk fruit = 100 g (1/2 cup)

Salt = 1 1/2 tsp

Paprika powder = 4 tsp

Red chili flakes = 4 tsp (You can increase the amount if you prefer a spicier taste. You can also substitute with black pepper or cayenne pepper.)

Apple cider vinegar = 120 ml (1/2 cup) (You can reduce the amount if you prefer a less tangy taste)

Water = 120 ml (1/2 cup)

Directions
