90-second Keto Bread (Coconut Flaxseed)
Here's another 90 seconds keto bread using coconut flour and ground golden flaxseeds. This is part of my small serving recipes. These individual or small servings recipes are great for individuals living alone or those who are the only ones living low carb/keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers.
DIRECTIONS FOR ALL 3 VERSIONS
1. For best results, weigh the ingredients with a digital scale
2. Add the dry ingredients into a bowl and mix to combine.
3. Add the wet ingredients and mix until a dough is formed.
4. Transfer the dough into a 5-inch square glass baking dish that is microwave safe and lined with parchment paper.
5. Spread evenly.
6. Microwave for 90 seconds. It is done when the top feels firm. The eggless version may need another 20 to 30 seconds to cook. As not all microwaves are the same, you may need to adjust the timing accordingly. If you prefer to use the oven, you can bake it for about 9 to 10 minutes at 350 F or 180 C. However, the texture will be different due to the difference in the cooking method so I would highly recommend using a microwave for such recipes.
7. Remove bread and parchment paper. Let it cool slightly before slicing into half.
8. All 3 versions turned out with a firm and soft texture, and they are crispy when toasted.
9. You can enjoy these 90 seconds bread as sandwiches, grilled cheese or toasts.
