2 Minutes Mug & Mini Pizza

Single or small serving recipes using mostly microwave ovens are super simple, quick and delicious. They are so convenient for individuals who live alone or those who are the only ones living low carb or keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers. For a change, I made a savory recipe. It's a 2-min mug and mini pizza with real crusts. They turned out so cheesy and flavorful. I noticed the difference when cooking the pizza in a microwave, the cheese stretches very nicely and lasts longer than when baked in the oven.

1.  For best results, weigh the ingredients with a digital scale

2.  In a small cup, mug or ramekin, add the dry ingredients for the mug pizza and mix well. Then add all the wet ingredients and mix until well combined. I added 10 g of cubed mozzarella cheese into the crust to add flavor as the crust is quite thick, but this is optional. Mix well then microwave for 90 seconds. Remove the mug, spread with pizza sauce, add toppings and shredded mozzarella cheese. Microwave for 30 to 40 seconds until the cheese is melted.  Sprinkle with chopped parsley and enjoy.

3. In a small bowl, add all the dry ingredients for the mini pizza and mix well. Then add all the wet ingredients and mix until a dough is formed. Knead the dough for a while just to incorporate all the ingredients then shape into a ball. Place the dough on a parchment paper, Mold into a round shape of 5-inch diameter. If using almond flour, you can get a 6-inch diameter. Microwave for 90 seconds and it is done when the top feels firm. Spread generously with pizza sauce, toppings of your choice and shredded mozzarella cheese.  Microwave for 60 seconds until the cheese is melted. Sprinkle with chopped parsley and enjoy.

4.  The crust for the mini pizza looks pale because browning is not possible with microwave, but you get a soft and slightly chewy crust and all the flavors of a pizza. Of course, if you prefer, you can pop the pizza slices into a mini oven toaster for browning.

5.  As all microwave ovens are different, you may need to adjust the cooking time accordingly.

6.  If you prefer to bake it in the oven, you can do so at 350 F or 180 C but I am not sure how long it will take as I have not tried it yet.

2-MIN MINI PIZZA

DRY INGREDIENTS

Coconut flour = 20 g (2 1/2 tbsp) (OR Almond flour = 60 g (1/2 cup)

Whole psyllium husks = 9 g (1 tbsp) (Ground until half its original volume)

Baking powder = 4 g (1 tsp)

Salt = 1/2 tsp

WET INGREDIENTS

Coconut oil = 15 ml (1 tbsp) (OR any keto friendly oil including melted unsalted butter)

Hot or boiling water = 60 ml (1/4 cup)

2-MIN MUG PIZZA

DRY INGREDIENTS

Almond flour = 30 g (1/4 cup) (OR Coconut flour = 10 g (1 1/3 tbsp)

Whole psyllium husks = 3 g (1/3 tbsp) (Ground until half its original volume)

Baking powder = 1/2 tsp

Salt = 1/8 tsp

WET INGREDIENTS

Coconut oil = 8 ml (1/2 tbsp) (OR any keto friendly oil including melted unsalted butter)

Hot or boiling water = 40 ml (2 tbsp + 2 tsp)

PIZZA SAUCE

Pure tomato puree = 50 g (3 tbsp + 1 tsp)

Olive oil = 8 ml (1/2 tbsp)

Italian seasoning = 1/2 tsp

Salt = 1/2 tsp

Black pepper = 1/4 tsp

(Mix all ingredients in a bowl)
