2-Min Keto Tiramisu Cheesecake

Here's another quick and small servings recipe based on my original tiramisu cheesecake recipe. This mini version of the tiramisu cheesecake is so easy to put together and all it takes is just about 2-min to cook in the microwave and you get a soft, moist and rich cake. It is so flavorful and incredibly delicious. These individual or small servings recipes are great for individuals living alone or those who are the only ones living low carb/keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers.

1.  For best results, weigh the ingredients with a digital scale.

2.  In a small bowl, add all the dry ingredients and whisk to combine.

3.  Add all the wet ingredients and whisk until well combined.

4.  Grease and line a 5-inch square glass baking dish with parchment paper. In the video, I showed you another option of using 2 small cups. Transfer the batter into the baking dish and spread evenly.

5. Microwave for 2 minutes. It is done when the top feels firm. If you are using the 2 small cups, you can microwave each cup for 90 seconds. If you do not have a microwave oven, you can try baking it in a conventional oven at 350F or 180C for about 10 to 15 minutes.

6.  Meanwhile, make the frosting. In a small bowl, add the cream cheese and mix with a spatula until soft and creamy. Then add the powdered sweetener and mix until creamy. Add the cold whipping cream and whisk to combine. Lastly, add the coffee mixture and whisk until well combined.

7.  Once the square cake is cooled completely, cut into half. Place one layer of the cake on a plate and top with some frosting. Spread evenly. Then top with the other half of the cake and frost the top of the cake. Dust generously with cocoa powder. Cut into 4 servings. If using cups, just frost the top of the cake and dust with cocoa powder.

DRY INGREDIENTS

Coconut flour = 15 g (2 tbsp) (OR Almond flour = 60 g (1/2 cup)

Baking powder = 1/2 tsp

Baking soda = 1/8 tsp

Monk fruit = 25 g (2 tbsp) (OR any keto friendly sweetener)

Salt = 1/8 tsp

Unsweetened cocoa powder = 6 g (1 tbsp)

WET INGREDIENTS

Coconut oil = 30 ml (2 tbsp) (OR any keto friendly oil including melted unsalted butter)

Whole eggs (Room Temperature) = 1 large (60 g)

Whipping cream = 60 ml (1/4 cup) (OR yogurt/coconut/sour cream)

Instant coffee powder = 5 g (1 tbsp) (Dissolved with 8 ml/1/2 tbsp of hot water)

Some cocoa powder for dusting

INGREDIENTS FOR CREAM CHEESE FROSTING

Cream cheese = 90 g (3/4 cup) (Softened)

Powdered sweetener = 50 g (1/2 cup)

Whipping cream (cold) = 30 ml (2 tbsp)

Instant coffee powder = 3 g (1/2 tbsp) (Dissolved with 5 ml/1 tsp hot water)

Note: This amount of frosting is sufficient to frost the square cake as well the 2 cakes in the cups. Hence, you can reduce the amount accordingly if you are only making the square cake or the cakes in the 2 cups.
